Egg Drop Soup Recipe
Ingredients:
- 4 cups of chicken or vegetable broth
- 2 eggs
- 2 green onions, sliced thinly
- 1 tablespoon of cornstarch
- 1 tablespoon of water
- Salt and white pepper to taste
- Optional: chopped fresh cilantro for garnish
Instructions:
In a small bowl, whisk together the cornstarch and water until smooth.In a medium pot, bring the chicken or vegetable broth to a boil.
Once the broth is boiling, reduce the heat to medium-low and slowly pour in the
cornstarch mixture while stirring constantly. Continue to stir until the soup has
thickened slightly.
In a separate bowl, whisk together the eggs until the yolks and whites are well
combined.
Slowly pour the beaten eggs into the soup while stirring gently in a circular motion.
The eggs will cook instantly and create thin strands.
Add salt and white pepper to taste.
Garnish with thinly sliced green onions and chopped cilantro (optional).
