Ingredients:


  • 8 Oz. Pad Thai Noodles
  • 2 Tbsp. Vegetable Oil
  • 2 Cloves Garlic, Minced
  • 1 Shallot, Thinly Sliced
  • 1 Red Bell Pepper, Thinly Sliced
  • 1/2 Cup Carrots, Julienned
  • 1/2 Cup Snow Peas
  • 1/4 Cup Vegetable Or Chicken Broth
  • 2 Tbsp. Fish Sauce
  • 2 Tbsp. Brown Sugar
  • 1 Tbsp. Tamarind Paste
  • 1/2 Cup Peanuts, Chopped
  • 2 Eggs
  • 1/2 Cup Bean Sprouts
  • 1/4 Cup Fresh Cilantro, Chopped
  • 1/4 Cup Green Onions, Chopped
  • 1 Lime, Cut Into Wedges

Instructions:


Soak The Pad Thai Noodles In Hot Water For About 15 Minutes, Or Until They Are 

Soft And Pliable. In A Wok Or Large Skillet, Heat The Oil Over Medium-high Heat. 

Add The Garlic And Shallot, And Cook For 1-2 Minutes Until Fragrant. Add The 

Red Bell Pepper, Carrots, Snow Peas, And Stir-fry For 2-3 Minutes Until They Are 

Crisp-tender. Add The Vegetable Or Chicken Broth, Fish Sauce, Brown Sugar, And 

Tamarind Paste To The Pan, And Stir To Combine. Drain The Noodles And Add 

Them To The Pan. Stir-fry Everything Together For 2-3 Minutes Until The Noodles 

Are Heated Through And Coated With The Sauce. Push The Noodle Mixture To 

One Side Of The Pan, And Crack The Eggs Into The Empty Side. Scramble The 

Eggs Until They Are Cooked Through, Then Mix Them Into The Noodle Mixture. 

Add The Bean Sprouts, Peanuts, Cilantro, And Green Onions To The Pan, And Stir 

Everything Together. Serve The Pad Thai Hot, Garnished With Lime Wedges.
